Star Wars: Jedi Knight - Jedi Academy Review (Shadowhawk668)

This is the ultimate Star Wars fanservice game for fans of the true Star Wars universe (not the Disney one). Rather than focusing on Kyle Katarn, this game instead follows his apprentice, Jaden Korr. Although he is canonically a human male in the novels, like with Revan and the Exile in the KOTOR games, you get to essentially create your own version of Jaden as either male or female and either human or alien. The game also has a light side and dark side ending just like Dark Forces 2. The combat is more or less the same as Jedi Outcast but with the addition of dual sabers and double bladed sabers, and the story is divided into small missions that you tackle in any order, with important story missions happening at certain points in the game. The multiplayer is still alive and has a thriving modding community, I would recommend JK Hub for finding mods and fixes for the game.
The fanservice aspect comes from the many EU locations and characters featured in the game, as well as the power fantasy of playing your own Jedi character who fits into the Star Wars canon (the true canon, not the Disney one). There's appearances from Luke Skywalker, Chewbacca, Wedge Antilles and Boba Fett, as well as Marka Ragnos from old republic lore. If you play only one Jedi Knight game, I'd recommend this one, you get your own Jedi Padawan story, and a great multiplayer and modding community, as well as lightsaber combat that puts any modern Star Wars game to shame.
