Thanks Valve for giving me the opportunity to get a refund and allowing me to write a review. These kind of shady practices should not be supported in any way by Valve. 3rd party analytics on-by-default (or "opt-out") should be part of a 3rd party EULA posted on the store page, so the buyer knows their data is sent to another entity before having the chance to opt out.
Here's the post I made on the game community forums.. That should explain more what's going on:
There's no 3rd Party EULA on store to suggest any kind of 3rd party spywareanalytics... Yet there's an in-game Opt-Out Unity Cloud Analytics. Good job!
You even got support from the German gov. I thought Germany and Germans care about privacy, but I guess not everyone is on the same boat, willing to give specific location and system information to third party non-EU companies.
A message from Unity about data privacy
Unity Analytics collects gameplay and device data if you are a player of games made with Unity. We collect this information to improve Unity-built games by providing analytics, diagnostic, and usage information to developers.
Information we obtain from these devices includes:
Device attributes: information such as the operating system, hardware and software versions, platform, screen size, and CPU/graphics characteristics.
Usage data: information about how you use the application. For example, day of first session, day of last session, session length.
Location data: specifically, the country.
In-app purchase data: if you perform financial transactions (such as when you make a purchase in a game), we collect information about the purchase. This includes purchase amounts and number of purchases.
Custom event game data these are specific in-game events that some games collect, and are contextual to the game. For example, level start, enemy count, player health are all examples of custom event data.
Identifiers and network: device IDs and IP address. Note that for security purposes, we do not expose this information.
Third Party Sharing and their Uses:
Unity uses the above types of data to allow game developers and publishers to tune their games for player devices and create personalized gaming experiences.

Searching for privacy posts.. It should have been obvious, but I don't search though game community discussions before buying a game, the whole analytics thing should have been clearly stated in a 3rd party EULA.

3. Using unity stats: This is sending a short note on basic events like mission started, mission finished, to get an idea on how well the campaign and stuff works on the base of pure numbers. This would not keep a port open. You can opt out of this in the main menu (privacy in the top right).
5. Using unity diagnostics: This is the automatic error reporting that sends pseudonymous error reports when a crash happens and similar. This only sends when an error occurs. It is also disabled via the privacy setting.
On top of that, I have to unblock Google spyware Captcha to even opt out. And, even so, the Opt Out and Delete Data button doesn't work, it remains forever in a loading animation.
Thanks for selling my location and system data. I've asked for a refund. Bye!
I was moved by the panting trees initiative... But when you sell your customer data with a dark pattern scheme, you can plant 10 trillion trees, you lost your customer forever.

In the light of my forum post, the dev took the time to explain what was going on and how they'd fix it.

Summary:
- The Unity Cloud analytics weren't actually working fom some time, but they were there at release until... we don't know, dev didn't specified a date... they were just disabled at some point.
- The Unity Crash & Error reporting was there and it would be still there, but it's now opt in.
- They've pushed the updated code in 1.17.3. Notes are not quite what I wanted, but I guess it's something.

Still a thumbs down for my own experience and the lax attitude towards privacy. But there's some hope out there...
